Ingredients

Product used:
Peas 500g
250g McCain Peas
  • 250g McCain Peas
  • 250g McCain Corn
  • 1kg starchy potatoes, cooked, mashed and cooled
  • 1 egg, lightly beaten
  • ½ cup flour
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/3 cup flour, for dusting
  • Oil to shallow fry

Method

1.In a medium saucepan, gently boil the peas and corn until soft. Divide in half, and mash or pulse one half with a stick blender. Set both aside to cool.
2.Combine the vegetables with the cooled mash and remaining ingredients, except the flour. Season to taste.
3.Shape into 8 ½ cup-sized patties and lightly toss in flour, shaking off excess.
4.Heat oil in a frypan and shallow fry in batches, approximately 3 minutes each side or until cooked and golden.
5.Serve with relish or Smoky bbq sauce.
