Ingredients

Rustic Thin Cut Chips 750g
McCain Rustic Thin Cut Chips
  • 4 chicken legs
  • 1 pkt McCain Rustic Thin Cut Chips
  • 1/4 red cabbage, thinly sliced
  • 1/2 red onion, thinly sliced
  • Small bunch dill, roughly chopped
  • 1/4 cup mayonnaise
  • 2 lemons, sliced
  • Drizzle extra virgin olive oil
  • Salt & pepper, to taste
  • Thyme bunch

Method

1.Preheat your oven at 210C.
2.Place the slices of lemons and sprigs of thyme in the base of a roasting dish.
3.Place the chicken Marylands over the top and then place additional lemon slices on top of the chicken. Drizzle with olive oil and season with salt and pepper.
4.Place in the oven and bake for 45 minutes. After 20 minutes, place the chips in the oven.
5.Whilst everything is baking, make your simple coleslaw by mixing together the cabbage, onion, dill and mayonnaise. Season with lemon juice, salt and pepper.
