    Ingredients

    Product used:
    Peas 500g
    1 ½ cups of McCain frozen peas
    • 2 x tbsp of cream cheese
    • 2 x tbsp of sour cream
    • Small bunch of mint leaves
    • 1 x small garlic clove
    • ¼ cup of pine nuts
    • ½ lemon, juiced
    • Salt and pepper

    Method

    1.Bring a small pot of salted water to the boil and blanch the peas. Once tender pop them into a food processor or hand stick blender. Combine with the cream cheese, sour cream, mint leaves, juice of half a lemon and garlic.
    2.For a richer flavour toast your pine nuts on a low heat until lightly toasted, be careful not to burn. Add the nuts to your mixture and blend for 1 minute or until smooth. Season to taste.
