Ingredients

Product used:
Corn Kernels 500g
McCain Corn 500g
  • 250g cream cheese, softened
  • ½ cup sour cream
  • 2 cups cheese mix*
  • ¼ cup creamy roasted garlic dressing**
  • ½ teaspoon smoked paprika
  • 200g bacon, chopped, pan fried and cooled
  • 500g bag McCain Corn, thawed
  • ¼ cup cheese mix, extra
  • Tortilla chips and shallots, to serve

Method

1.Preheat oven to 180°C. Meanwhile, in a large bowl, combine cream cheese, sour cream, cheese, garlic dressing, paprika and bacon, reserving some bacon for garnish. Stir until fully combined
2.Gently stir through corn. Pour into an 8 cup capacity baking dish. Top with extra cheese mix. Bake for 25 minutes or until bubbly
3.To serve, top with reserved bacon bits, shallots and tortillas
