Ingredients

500 grams of penne
  • 55 grams of butter
  • 450 grams of asparagus, cut into small pieces
  • 1/4 cup dry white wine
  • 1 1/2 cups McCain Frozen Peas, thawed
  • 1/2 cup thinly sliced fresh mint
  • 1 handful of Rocket
  • Grated Parmesan, to taste

Method

1.Cook penne as per directions on the packet, reserving 1/4 cup of pasta water.
2.In a large skillet, melt butter over a medium heat.
3.Add asparagus and cook until crisp-tender, approx 4 minutes.
4.Add wine, and cook until reduced by half, 30 seconds.
5.Add peas and mint and heat through.
6.Season, and toss with penne and pasta water. Top with Parmesan and roquette to serve.
