McCain Delish Italian Style Potato Bake 500g
  • 2 x 175g chicken breast fillets
  • 100g green beans
  • 1 tablespoon pine nuts
  • 1 tablespoon olive oil
  • 1 tablespoon finely shredded basil leaves
  • ¼ cup finely grated Parmesan cheese
  • 1 teaspoon crushed garlic
  • 1/3 cup white wine

Method

1.1. Heat a frying pan over medium-high heat. Add pine nuts and cook for 3-5 minutes, stirring frequently, until golden brown. Remove pine nuts and set aside.
2.2. Return pan to heat and add oil and chicken breast and cook for 5 minutes before turning over. While still cooking, combine pine nuts, basil and Parmesan in a small bowl and spoon evenly over chicken and cook for a further 3-5 minutes or until chicken is just cooked.
3.3. Reduce heat to low, add the green beans to the pan, top with garlic and pour over white wine. Allow wine to simmer gently and 3-5 minutes or until beans are cooked. Sprinkle with extra fresh basil and Parmesan.
