Pie maker smashed pea and haloumi fritters

Baby Peas 500g
2 cups McCain Baby Peas
  • 225g haloumi, coarsely grated
  • 2/3 cup self-raising flour
  • 2 green onions, thinly sliced
  • 1 garlic clove, crushed
  • 2 tablespoons chopped fresh mint leaves
  • 2 eggs, lightly beaten
  • 1/2 cup milk
  • Poached eggs (see notes), to serve
  • Tomato relish, to serve


1.Cook peas in a saucepan of boiling water, for 2 minutes or until just tender. Drain. Return to pan. Using a potato masher, roughly mash peas. Transfer to a large bowl.
2.Add haloumi, flour, onion, garlic, mint, egg and milk. Season well with salt and pepper. Mix well.
3.Preheat pie maker.
4.Spoon 1/4 cup batter into each hole of pie maker. Close the pie maker. Cook for 10 to 12 minutes or until golden and cooked through. Repeat with remaining batter. Serve fritters with poached eggs and tomato relish.
