  • 1 x 750g bag McCain Pub Style Wedges
  • 1 tbsp olive oil
  • 150g lean beef mince
  • 1 green capsicum, diced
  • 1 x 30g packet taco seasoning mix
  • ¾ cup (190mL) water
  • ¼ cup (65mL) chopped coriander leaves
  • 1 cup (250mL) grated cheddar
  • ½ cup (125mL) Mexican salsa

Method

1.Heat oven to 230oC (210oC fan forced). Place wedges evenly as a single layer on a tray and bake according to pack instructions.
2.In a large pan, heat olive oil and add lean mince and capsicum. Cook until mince is browned, then add taco seasoning mix and water. Allow to simmer gently for 10 minutes, then add coriander.
3.Top cooked wedges with taco mince and cheese, return to the oven for 5 minutes, then remove and serve dolloped with salsa.
