Smashed Peas with Ricotta and Leg Ham

Ingredients

  • 1 small loaf sour dough, sliced
  • ½ x 500g packet McCain Peas
  • 200g smooth ricotta
  • Sliced leg ham pieces, panfried to warm through
  • Balsamic vinegar to serve

Optional: Greek yogurt and pistachios

How to make it

  1. Toast sour dough and place on a large platter.

  2. Cook peas according to pack instructions and mash gently against the side of the pan to create a half crushed texture.

  3. Fold through the ricotta and spoon onto toasts.

  4. Top with leg ham pieces and drizzle with balsamic to serve.

Tipp: Serve with Greek yogurt and pistachios.
