Baby Peas & Tuna Spaghetti

Ingredients

  • 500g spaghetti
  • ¼ cup extra virgin olive oil
  • 1 small brown onion, finely diced
  • 6 cloves garlic, roughly chopped
  • 1 x 425g can tuna in water, drained and flaked
  • ½ x 500g (250g) frozen packet McCain Baby Peas
  • 2 tbsp lemon juice
  • salt and freshly ground black pepper, to season
  • freshly grated parmesan cheese, to serve (optional)

How to make it

  1. Bring a large pot of salted water to the boil and add the spaghetti to cook according to instructions on the packet.
  2. Heat a large frying pan over medium heat and add the olive oil, onion and garlic. Cook the onion and garlic for approx 3 minutes until fragrant and softened.
  3. Add the drained tuna, breaking it apart with a spoon and stirring it through the oil.
  4. Add McCain Baby Peas and lemon juice and cook for 1 minute. Season with salt to taste.
  5. When the pasta is ready, take ¼ cup of the pasta water and add it to the frying pan along with the drained pasta. Toss to combine and coat the pasta with the contents of the pan.
  6. Grind over lots of black pepper and serve with parmesan.
