Baby Peas & Tuna Spaghetti

Ingredients
- 500g spaghetti
- ¼ cup extra virgin olive oil
- 1 small brown onion, finely diced
- 6 cloves garlic, roughly chopped
- 1 x 425g can tuna in water, drained and flaked
- ½ x 500g (250g) frozen packet McCain Baby Peas
- 2 tbsp lemon juice
- salt and freshly ground black pepper, to season
- freshly grated parmesan cheese, to serve (optional)
How to make it
- Bring a large pot of salted water to the boil and add the spaghetti to cook according to instructions on the packet.
- Heat a large frying pan over medium heat and add the olive oil, onion and garlic. Cook the onion and garlic for approx 3 minutes until fragrant and softened.
- Add the drained tuna, breaking it apart with a spoon and stirring it through the oil.
- Add McCain Baby Peas and lemon juice and cook for 1 minute. Season with salt to taste.
- When the pasta is ready, take ¼ cup of the pasta water and add it to the frying pan along with the drained pasta. Toss to combine and coat the pasta with the contents of the pan.
- Grind over lots of black pepper and serve with parmesan.
