Ingredients
- 1 x 1kg packet McCain Seasonal Mix
- 400g kipfler potatoes, washed and chopped
- ½ cup extra virgin olive oil
- ¼ cup balsamic vinegar
- ¼ cup parsley and ¼ cup mint leaves, washed
How to make it

Cook the McCain Seasonal Mix according to pack instructions

Boil the potatoes until tender.

Drain both and toss with olive oil, balsamic vinegar and herbs. Serve hot.
